Homemade ice cream can be made in many ways. For me, I have found the best way ever! I’m talking about an ice cream machine that needs no cranking, no rock salt, and best of all, no chilling the bowl! Yippee! I love homemade ice cream especially since I can control the ingredients that go into it.
Homemade ice cream is the best, especially without rock salt or prechilling. I wasn’t planning on making a blog post about making homemade ice cream. Really, how much can you talk about making ice cream?

Raw Milk Homemade Ice Cream
Making raw homemade ice cream is very easy and a good way to use the extra milk and cream, and especially a good way to use any fruits that are in season.
We make all our homemade ice cream with raw organic milk and no eggs. I don’t care for the heaviness that eggs make me feel after eating ice cream with eggs. Not to mention, the extra care that needs to be taken when making ice cream with raw eggs.

How do you make homemade ice cream from scratch?
Using an ice cream machine maker will guarantee the best results, as the temperature will be calibrated to make the ice cream so you absolutely do not have to do anything but add the ingredients.
What can you use instead of cream to make ice cream?
Half and Half is a great substance or any kind of whipping cream as well.
Is homemade ice cream healthier?
Yes! You control the ingredients you put into your ice cream, and there are no preservatives. Any fruit you pick will be healthier than buying it from the store, and you can also store your ice cream in a glass container.
Is making ice cream cheaper than buying it?
In the long run, it is cheaper because you can control the amount and ingredients you would like inside your ice cream.
Stainless Steel Ice Cream Machine
My number one criterion was to find an ice cream maker that had a stainless-steel bowl. I did a lot of research, watched YouTube videos, and read a lot of reviews before purchasing the one that I found. Even though the paddle on the machine is made of plastic I decided that since the bowl was stainless steel, I could live with the paddle being plastic.
Raw Milk Eggless Homemade Ice Cream
We purchase our raw milk once a week from the farmer’s market. Since today is a Thursday, I will be picking up more fresh milk from the farmer’s market. I’d like to use up the milk I have on hand before getting the new milk.
Some ways I use my extra milk are by making butter, cottage cheese, yogurt, and today, ice cream. I had about 2 pints of fresh strawberries from the garden that I wanted to use for something and since it wasn’t enough for jelly, I thought why not make ice cream since I have extra milk to use?
Herd Share in TN
We are very fortunate in the state of Tennessee because you are allowed to buy into a herd share. Buying into the herd share means that we are allowed to buy milk from the local farmer. Also, we are very fortunate that this farmer is certified organic.
We are going to visit the farm very soon to create a whole blog post about how milk is produced. Of course, I love the fact that my milk comes from Jersey cows and going into this Jersey girl! I will get into much more after our visit, I can’t wait, I am so excited.
Making Homemade Ice-Cream Without Eggs
It’s very hard for me to create recipes because I take after my mother and my grandmother by “eye-balling” when I cook and bake. For this recipe, I took the time to measure everything so you will have an exact recipe. Base Ingredients for Homemade Ice Cream
- 1-1/2 cups milk (12 ounces-370 grams) (I am using raw organic milk)
- 1-1/2 cups cream (12 ounces-360 grams) (I skim the cream from the milk when I get home from the farmers market)
- ¾ cup of sugar (5.3 ounces-150 grams) (I use Sugar in the Raw)
- 1 teaspoon moonshine vanilla bean extract (more if you like it strong)
- A Dash of salt is optional
Extra Ingredients for Homemade Ice-cream
Now here is where you can get creative. Use fruits that are in season to add to your ice cream. I have even used frozen fruit. I grind up the frozen fruit before adding it to the milk mixture. For the next few recipes start with the base ice cream recipe above.
You will need 1 pint (2 cups) of fresh strawberries and or raspberries-washed, hulled, and pureed-add to the basic ingredients base above. If you would like to make your own strawberry or strawberry-rhubarb jam, you can find out in this post Easy Jams With and Without Pectin.
Basic Steps for Making Homemade Ice Cream
This particular ice cream machine has a 10-minute pre-stir which I always use if using coarse Sugar-in-the-Raw. After this stirring, set the machine to ice cream mode which is 60 minutes.
Note: the strawberries push the ice cream up to the top and it barely fits but, still works. I read that some say not to worry and I don’t. lol

Containers to Use for Ice Cream
After the machine shuts off after the 60-minute cycle, you will have to decide whether to put all the ice cream in one container or portion it out as I have.
I am using recycled Oui yogurt jars. Since the yogurt jars do not have a reusable lid, I am using my Weck jar lids. They stack so nicely in the freezer too. This saves time in spooning it out and helps with portion control.
Homemade Ice Cream Video Tutorial
Peach Homemade Ice Cream Without Eggs
- Approximately 2 cups of washed, pitted, peeled, and pureed peaches
- 2-3 tablespoons fresh lemon juice
Follow the “Basic Steps” above for the strawberry ice cream after adding the ingredients as well as peaches and lemon juice to the machine.
Chocolate Homemade Ice Cream Without Eggs
- 1 ¾ cup heavy cream
- ¼ cup milk
- ½ cup of cacao powder
- ¾ cup of sugar
- 1 tablespoon moonshine vanilla bean extract
- A pinch of salt is optional
Follow the “Basic Steps” above for making ice cream above after adding these ingredients to the machine.
Homemade Hot Fudge Sauce
- ½ cup of heavy cream
- 3 tablespoons butter
- 1/3 cup of brown sugar or sugar in the raw
- 1/3 cup white unrefined sugar
- Pinch of salt
- ½ cup cacao powder
Directions
- Melt the heavy cream and butter until bubbles begin, constantly stirring
- Add the sugars and the salt, stir well
- Add the cacao powder on low heat, and whisk until blended
- Pour into small portion jars and place in the refrigerator
- To reheat prior to use on ice cream, either put the jar in the microwave at low bursts or add the jar to a jar of hot water (double-boiler method)
Homemade Frozen Yogurt Recipe
I make yogurt all the time using my Instant Pot or just on the just the counter and towel method using raw milk I get from a local farmer. But you certainly can use yogurt from the grocery store. Making this frozen goodness only requires 3 simple ingredients. Plain yogurt, honey, and an extract of your choice.
Ingredients for Frozen Yogurt
- 32 ounces of greek-style yogurt
- 1/3 cup raw local honey or a little less
- 1 teaspoon extract of your choice
- 1/2 cup optional fresh or even frozen berries of your choice
- 1 tablespoon cacao powder is optional if you like a chocolate frozen yogurt
- If using cacao powder, try using cacao moonshine extract
Directions for Frozen Yogurt
- Place all the cold ingredients in the stainless steel ice cream bowl
- Use the setting for yogurt or sorbets
- Eat immediately or freeze
- It is best to freeze in individual glass jars for portion control and ease of serving
- Allow the frozen to sit 3-4 minutes before serving
Don’t forget about making frozen yogurt popsicles that can be wholesome and good for you. Try adding fresh fruit or even a jam inside the stainless steel popsicle freezer container.
How to Make a Simple Syrup Recipe
To make a simple syrup, combine equal amounts of sugar and water, bring to a boil, and stir until the sugar is dissolved. Even though you have 2 cups of ingredients, you will not end up with two cups of liquid.
The sugar dissolves then you will end up with approximately one and a half cups of simple syrup. I always have simple syrup in my refrigerator because I use it when I make kefir. You may choose to infuse the simple syrup for an added flavor.
It’s essential that the simple syrup should be very cold before adding it to make sorbet.
Storing Simple Syrup
We have a commercial refrigerator with a clear glass door. Since there is always light coming through the door, I use UV glass whenever possible. I also put a label with a number on the lid so I know how to distinguish it from the kefir bottles that I also have stored in the refrigerator.
Homemade Frozen Sorbet
This stainless steel ice cream machine also makes an excellent sorbet! Try using in-season fruits or even buy organic frozen fruits.
- 2 pints of fresh strawberries-washed, hulled, and pureed
- 1 cup plus 2 tablespoons of simple syrup
- ¼ cup fresh squeezed lemon juice
2 pints of pureed strawberries should be 3 cups more or less. Mix the strawberries’ simple syrup in lemon juice together. You may add more lemon juice or simple syrup to your liking.
This particular ice cream machine has a 10-minute pre-stir setting which I always use. After this cycle is completed, set the machine for ice cream mode which is 60 minutes just like you did with the basic ice cream recipe.
As an added bonus, this ice cream machine also makes frozen daiquiris, margaritas, and more for those of you that prefer something more adult and cold!
Strawberry Daiquiri
- 2 pints of fresh strawberries-washed, hulled, and pureed
- ½ cup superfine sugar
- ½ cup freshly squeezed lemon or lime juice
- 1 1/3 cups rum
Puree the strawberries and put them in the machine with the rest of the ingredients. Freeze for 30 minutes, more or less will depend on how stiff you like your drinks. This recipe will serve 6 people.
Ice Cream Cookies, Brownies, and Cacao Mousse
I have an excellent recipe for a One-Bowl Molasses Cookie that makes the best homemade ice cream sandwich cookies. You should at least give it a try, yum!
Ice cream goes so well with One-Bowl Brownies too, so why not whip up a batch while the homemade ice cream is churning? It is such a treat, seconds are always allowed in our home!
