Sourdough Tortillas Made with a Bread Machine

Bread machine sourdough tortillas are so easy to make. Why do I use a bread machine? It’s easy on my wrists, takes one pan for making, rising, and resting. If it makes my life easier, I am all in! If you like buttermilk rolls using a bread machine, I have a post HERE.

So easy to make sourdough tortilla wraps in a bread machine overnight.

Every Sunday morning I make sourdough waffles. You can find that link The Fluffiest Sourdough Waffles for Two. On Monday morning I usually put the sourdough in the fridge (especially in the summer). If I am in the mood to make tortillas for quesadillas, I will take out a 1/2 cup of sourdough to make bread machine sourdough tortillas.

Bread Machine Sourdough Tortillas Recipe

Ingredients to Make Sourdough Tortillas

  • 2 cups flour (fresh ground is best) your choice of flour
  • 1 teaspoon salt (more or less to your liking)
  • 1/2 cup water (filtered)
  • 1/4 cup fat (tallow/butter/coconut oil)
  • 1/2 cup sourdough starter
  • Add all to the bread machine. (If using the traditional method-knead until a nice dough)
  • Use the “dough cycle” mine is #9
  • Let sit 8-24 hours in the machine or keep covered in a bowl if not using the bread machine
  • Punch the dough down after the ferment

Roll Sourdough Tortilla Balls

Roll sourdough tortilla dough into 2-inch size balls, and keep them covered while cooking on a griddle so they don't dry out.
  • Form into 2-inch balls (approximately 2 tablespoons of dough)
  • Flatten using a tortilla press (or by other means)
  • Keep covered with a dampened clean flour cloth, tea towel, or other fabric
  • Only remove one at a time

Kitchen Hack for Non-Sticking Tortillas

I took a non-stick sheet that I used in my dehydrator and cut it into 4 pieces. Two of the pieces are for the outer “sandwich” part of the dough. This means, the pieces go over and under the dough before it is pressed. The other two are for backup if the sheet is too hot. The sheets act as a releasing agent.

  • Add a sheet, a ball of dough, and another sheet, and press the dough
  • Remove the uncooked sourdough tortilla by removing one-sheet
  • Proceed to either step listed below

Grilling Sourdough Tortillas

Use any type of hot griddle to make sourdough tortillas. Heat the griddle slowly to reach a good temperature.

Grill your sourdough tortillas in any pan you so choose. I love cooking mine over an open flame when I am not using a cast iron griddle indoors. No amount of oil should be required.

  1. Preheat the cast iron
  2. Start the pre-heating process very slowly
  3. Adjust the heat from medium to medium-high until well heated
  4. When water dances off the griddle, it is ready to make sourdough tortillas
  5. Place the tortilla, palm side up, slowly let a tip of the tortilla stick then lay the rest in the pan
  6. OR, my favorite way, put the dough with the sheet on it, dough-side down in the cast iron
  7. Wait 30 seconds and remove the sheet, it will come off easily
  8. The first cook will be approximately 30-45 seconds then flip it over
  9. Cook the second side for approximately 1 full minute
  10. Flip the tortilla over
  11. Give a double-tap and you should see it puff up like a rooster’s chest (this does not always work but who needs air bubbles?)
  12. Cook about 30 seconds or more
How to store sourdough tortillas while making them to allow them to become pliable.

Immediately put in a bowl that has a clean cotton or linen towel in it.  Cover it tightly. Keep stacking each on top of the other and covering it with the towel. The tortillas may seem a little stiff and dry. Leave them wrapped in the towel for approximately 10-15 minutes. Magic will happen while you are waiting.

After 15 minutes or so, the sourdough tortillas will become flexible. I always make quesadillas with shells. Having them already lukewarm makes it easier to put them back on the hot griddle for light steam. Warm the tortillas, add cheese and meat only to half, fold over and seal shut to flip over.

How to Store Tortillas

Store cooked sourdough tortillas in a tight container on the counter for a day or two or place them in the fridge.

You may store homemade sourdough tortillas on the counter for a few days ensuring they are in a container that will keep the air out.

If the tortillas are not eaten within 2 days, they should be placed in the refrigerator with a tight cover. I suggest keeping them in a clean towel and a tight-fitting bowl to keep any odors from absorbing into the tortilla.

How to Make Air-Fryer SourdoughTortilla Chips

How to make air-fried sourdough tortillas is very easy to do in under 8 minutes in an air fryer.
  1. Use a pizza cutter or knife and slice into wedges
  2. Use a cookie cutter and make little rounds of chips
  3. Spray each side with an organic coconut oil cooking spray (of a choice of your own choosing)
  4. Sprinkle each side with sea salt, or other seasonings
  5. You may need to lightly spray your fryer basket (I use the rotating basket, no need to)
  6. Place the tortilla chips into the fryer, a single layer is required
  7. The temperature should be 350
  8. Air-fry for 4-8 minutes, if not using a rotating basket, flip halfway through

  7. I get that with sometimes with any recipe-it sounds like you need more flour. There are always variables, humidity, flour, etc. Next time, it won’t hurt to add more flour, you have nothing to lose? Do you use the non-stick sheet? What fat did you use, was it the same? Unfortunately, even the best cooks in the world have mishaps. Don’t be too hard on yourself. You know you have made these twice and they worked, so it’s definitely not you :). I have a recipe I have made 30 years with my eyes closed, tried to make a video, and 3 times it failed. It just happens :). Let me know if works again.   8. Made these twice and they were fabulous! Went to make a batch a moment ago and the sourdough was super sticky. It was unmanageable. It went into the trash. What did I do wrong? I was really disappointed.
