One Bowl Quick Brownies in 2 Ways!

Quick brownies in one bowl are so fast to make! This recipe was one of the first recipes that I introduced to my children when they were around four or five years old. Decades later, I am still using this same recipe!

Brownie Recipe that is quick and easy for the best dessert

We literally can be craving a snack, throw the few ingredients together before we sit down to supper, and by the time, we are done eating; the brownies are done and ready to be taken out to cool for a snack later on. For the fat in this recipe, butter, oil or even ghee can be used.  

The eggs we use are always from our “girls” who give the deepest yellow yolks we have ever had. We let our eggs sit on the counter for up to 10 days so all the ingredients are at room temperature. If you want to know what to do with those eggshells, check out my post on Many Uses For Eggshells to see the benefits of saving yours!

Tips for Making Quick Brownies

  1. Start with the freshest ingredients possible especially the baking powder
  2. Room temperature ingredients include the melted butter (if the butter is too hot, the eggs will start to cook)
  3. Oven preheated to 350*
  4. Ingredients are measured out in separate dishes (or be brave and use one bowl to add all the ingredients)
  5. Greased pan
  6. If using a scale, have it tared and set to grams

Ingredients for One-Bowl Quick Brownies

  • 1/2 cup melted (114 grams) and cooled butter or 1/4 cup butter and a 1/4 cup Ghee
  • 1 cup sugar or (200 grams) we use sugar in the raw or 1/2 cup sugar in the raw and 1/2 cup of organic unrefined sugar
  • 1 teaspoon pure vanilla homemade or store purchased or 1/2 teaspoon vanilla powder
  • 2 eggs at room temperature
  • 1/2 cup flour (69.8 grams) we use unbleached-white flour
  • 1/3 cup (39.7 grams) of unsweetened cocoa powder
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt-we use iodized salt
  • Chocolate chips, Caramels, and nuts are optional
  • Optional 1 tablespoon of heavy cream powder
  • 1 heaping teaspoon of instant espresso or instant coffee

One Bowl Quick Brownies Instructions

Mixing all the ingredients to make one bowl brownies for baking
  1. Blend the melted, cooled butter with the sugar
  2. Add the eggs and use a spoon or dough whisk and beat well
  3. Sift in the flour, cocoa, baking powder, and salt over the bowl, stirring in the dry ingredients into the wet mixture
  4. Do not over-beat this, I use the whisk and pull the mixture from the bottom to fold the ingredients together
  5. Stir in nuts and chips at this time if you are adding them
  6. Spread into a greased 9-inch pan or into a cast iron pan of the same size
  7. Bake at 350* or in a convection oven set at 325*degrees
  8. 15-25 minutes of bake time is recommended for the brownies will pull slightly away from the edges of the pan
  9. Bake 20 minutes for moister brownies
  10. Optional: when removed from the oven, add pieces of caramel, slightly pushing in the hot brownies
  11. Cool and add frosting (optional) but yummy!
  12. A dollop of fresh whipped topping-optional

If for some reason, you have brownies after one day, add a piece of bread, preferably the crust to the vessel the brownies are kept in. It is best not to put the brownies in the refrigerator. “Warming” the brownies in the microwave help when serving day-old brownies. 

Can You Freeze Brownies?

The answer is no if you make the dry-cakey type brownie. When you freeze brownies, they will crumble into messy pieces when thawed. If you make gooey ones, then the chance of freezing and thawing them increases.

The drier the brownie, the less chance it has to be the best when thawed. Hold back on pre-cutting the brownies until serving. This holds the moisture in the brownie much better.

Making Quick Brownies From Scratch While Camping!

We have even packed all the dry ingredients in a jar, the wet ingredients butter/sugar/vanilla in another jar (eggs too of course not cracked), and have taken these camping and made them in a cast-iron skillet over a bed of coals with a lid on them-they tasted super!

Don’t forget to bring the big marshmallows, put them on or between two very warm brownies for brownie smores!

Camping One-Bowl Quick Brownies

Making brownies while campling
  • Place the ingredients in a cleaned and dried mason jar in this order:
  • Chocolate chips, Caramels, and nuts (optional)
  • 1/2 cup flour (69.8 grams) we use unbleached-white flour
  • 1/4 teaspoon salt-we use iodized salt
  • 1/3 cup (39.7 grams) of unsweetened cocoa powder
  • 1 heaping teaspoon of instant espresso or instant coffee (optional)
  • 1 tablespoon of powdered heavy cream (optional)
  • 1/4 teaspoon baking powder
  • Place a 3″ circle of round wax paper for the next layer
  • 1 cup sugar or (200 grams) we use sugar in the raw or 1/2 cup (100 grams) sugar in the raw and (100 grams) 1/2 cup of organic unrefined sugar
  • 1/2 teaspoon vanilla powder, if not, bring vanilla extract-1 teaspoon pure vanilla extract
  • OR, place the sugar and vanilla powder in a food-grade wax paper baggie
  • 1/2 cup (114 grams) butter or 1/4 cup butter and 1/4 cup Ghee in a food-grade wax paper baggie or wrapped in food-grade wax paper
  • 2 eggs in a food-grade wax paper baggie or wrapped in parchment paper
  • Big marshmallows in wax paper or parchment paper
  • Add a canning jar, ring, and lid

Add instructions and suggest using the butter residue from the wax paper/parchment paper to wax the pan and to compost the eggshells at the site of a camping recipient.

If for a gift, add a wooden spoon and a wire whisk along with a 5″ piece of wool as a “Scrubby” or include a washcloth if so choosing.

In Conclusion

Super easy quick brownies can be made from scratch using only one bowl. You can control the ingredients as well as any add-ins you’d like to add. Taking the pre-made brownie jar camping is my favorite thing to do and cooking them in a cast iron pan.

Having the best ingredients will ensure you are creating a dessert that is natural and good for you too versus buying a boxed brownie mix.
