Easy Potato Soup in the Instant Pot

Easy potato soup in the Instant Pot with just a few ingredients. Potato soup can be customed too by adding vegetables like sweet potatoes or leeks. Or all three! Vegan potato soup is included in this recipe but non-vegan can be made too. There are many names for potato soup-like, “old fashioned Irish potato soup”, “old fashioned potato soup recipe”, “comfort soup” and plenty more.

Ingredients for Potato Soup

  • 4 large Russet potatoes
  • 32 ounces of vegetable stock or (chicken or beef stock for non-vegan)
  • 1 small onion and garlic
  • Celery, 1-2 stalks
  • 2 teaspoons of coconut oil or (ghee or butter for non-vegan)
  • Salt and pepper to taste
  • Dried parsley flakes or red pepper flakes
  • Optional: Leeks, pumpkin, sweet potatoes, or turnips
  • Add on: 1 large optional for in place of 1 large Russet potato
  • Considering adding 1-2 teaspoons garam masala at the END of cooking not during

If using a white potato, you may choose to leave the skins on for more vitamins and a different texture in the soup.

Directions for Potato Soup

  • Scrub and peel the potatoes (optional add ons) well with veggie soap
  • Cube into small pieces
  • Onion, garlic, celery, and optional leek, mince finely
  • Sauté the onions, garlic, and celery on the Sauté setting on the Instant Pot using oil, Ghee, or butter (leek is optional)
  • Add the rest of the ingredients
  • Put the lid on, check the gasket, and make sure it’s positioned to the venting
  • Use the rice function or 12 minutes manual

I love to add leeks, sweet potatoes, and pumpkin to my potato soup. You would sauté the leeks with the garlic and scrub, peel and cube the sweet potato, turnips, and or pumpkin, decreasing one potato for the add-on. Use 1/2 cup up to one cup of diced pumpkin, sweet potatoes, or turnips to replace one potato.

This is an easy recipe, add more potatoes, vegetables to your liking. Ensure you have at least 2-3 inches of liquid covering the vegetables in the Instant Pot.

Creamy or Chunky Potato Soup?

Our house prefers chunky soup. In order to have a few chunks of potatoes or add-ons, remove about a cup of cooked potatoes or add-ons before using the immersion blender to blend the soup, right in the Instant Pot. Gently stir the potatoes back in the soup once the immersion blending is completed.

How to Thicken Potato Soup Without Flour

Powdered milk is a good thickener for potato soup as well as 100% natural instant potato flakes. Stir the powdered milk into the soup while it’s hot.  If you want a thickened vegan soup, try using about 2 tablespoons of cornstarch or arrow root whisked in cold water before adding to the hot soup to eliminate lumps.

Potato Soup Not Using the Instant Pot

If you choose to make the soup on the stove-top, that’s easy too. Sauté the onions, garlic, celery, and optional leeks in a pot. Gently boil the soup until the potatoes are fork-tender. This takes around 15-20 minutes. (If you are not partial to boiling; steaming or microwaving the potatoes is another method to cook the vegetables). Add the rest of the ingredients to the drained potatoes. Use the immersion blender or use a potato ricer to “mash the potatoes” and still well into the soup. Garnish with fresh or dried parsley.

How Long Does Potato Soup Last in the Fridge?

Once I finish eating the soup and while it is still hot, I put it in a canning or Weck jar and place the lid and ring or gasket on; which makes it self-seal. By doing this method, the soup will last in the fridge for at least a week. Normally, the potato soap will stay fresh 3-4days.

Can You Freeze Potato Soup?

Yes, you can freeze potato soup. It’s best to use the same day soup for freezing to ensure freshness. This really only works well without any type of dairy in it. If you use milk or cream, the milk will separate and the soup will be grainy. I use Ball freezer jars for freezing soup but I have seen others lay the soup flat in plastic storage bags to freeze then store like files.
