White mushrooms used mostly in this recipe are the most eaten mushroom and contain 300 mg of potassium per serving. The white mushroom is also known as Agaricus Bisporous and is the most widely-eaten mushroom in the USA. Other names for the white mushrooms are button, common, table, and champignon mushrooms.

Did you know that mushrooms are good for the heart because they are high in Vitamin B and riboflavin, pantothenic acid, and niacin?  Besides, they are low in calories and no cholesterol at all. Niacin is a benefit to maintaining healthy skin and is a bonus for the digestive system.

Selenium has an antioxidant agent that is found in mushrooms. Not only are mushrooms good for you but they have been found to help with anti-aging effects. I am all for that! The portobello mushrooms have the most ergothioneine antioxidant.

Chicken Broth Versus Chicken Bone Broth

Chicken broth is made by cooking, usually simmering the chicken, bones, and vegetables down, just like beef broth. Whist, chicken bone broth is made from the chicken bones that are cooked down, this takes numerous hours of stewing/simmering or the process can be quickly done in the Instant Pot.

I prefer chicken bone broth because it is higher in vitamins and minerals due to the bone marrow. If you are vegan, the vegetable stock is lovely too. Check out the steps below on how to make your own chicken bone broth from scratch.

How do you make chicken bone broth from scratch?

*Use leftover chicken bones from soup and add to a large pot of water
*Bring to a boil for 5 minutes
*Reduce the heat to a low simmer
*Place a lid on the pot and simmer 4-6 hours
* Strain the broth and refrigerate or freeze in glass canning freezer jars

Homemade Mushroom Soup Recipe Ingredients

Homemade mushroom soup recipe from scratch
  • 8 ounces fresh mushrooms
  • 2 tablespoons Ghee or butter (vegan recipe substitute Ghee with coconut oil)
  • 1/4 cup or half of an onion (save the skins for dyeing or the compost pile)
  • 1/3 cup arrowroot, flour, or cornstarch
  • salt and pepper to taste
  • 1-quart chicken stock (vegan recipe substitute chicken stock with vegetable stock)
  • 1 cup half and half cream (vegan recipe substitute cream with soy, oat, or almond milk)

Preparations

  • Wash and spin or pat dry the mushrooms (recycle the water in the garden or for house plants)
  • dice the onion
  • slice or dice the mushrooms
  • pre-make the thickener (optional)

Directions

  • Melt Ghee, butter, or vegan oil in a pan on low (250 degrees)
  • Add the onions and mushrooms
  • Sauté and stir well for 5 minutes on low (200 degrees)
  • Put the lid on for 1 minute and let the mushrooms steam
  • Add half of the container of stock and stir well
  • Let simmer for another 5 minutes
  • Make the thickener by mixing the milk and cornstarch, arrowroot, or flour
  • (adding heavy cream powder is optional), stir out all the lumps
  • Turn the heat up to medium-high (250 degrees)
  • Put the lid on for 5 minutes and let the soup thicken
  • (turn the heat up to 350 degrees)
  • Over the next 15 minutes, we will be adding stock, stirring, and adding more stock
  • Immersion blending is optional-do that after the soup has cooked the 15 minutes
  • Eat immediately or store in a glass container
  • Once cooled, this soup can be frozen and reheated
