2 super moist zucchini bread recipes are included in this post! Did you know that zucchini is high in potassium and very high in vitamin C? Zucchini is mostly water which means it’s low in calories and high in fiber, a great combo!

I remember first introducing zucchini bread to my son, he never knew it had zucchini in it. He said it was better than iced cake! The cinnamon bread seems moister for some reason than the chocolate zucchini bread, but both are still a hit in my book!

The Benefits of Zucchini

You can eat more than just zucchini bread, from zucchinis. You can eat the seeds, the blossoms, and the skins.

The zucchini skins, seeds, and blossoms are all edible. I prefer to peel the zucchini when making zucchini bread and muffins. A small to medium-size zucchini is best to allow the seeds to be grated into the batter and will practically disappear when baking.

Young zucchini, fresh from the garden, has tender skins and can be eaten after washing well. I always wash my vegetables naturally using my very own Natural Dish Soap.

Once the zucchini becomes older as well as the larger zucchini, the skins are rather tough to eat, especially raw. But are great when steamed or added to a stirfry!

If you don’t grow zucchini or the planting season is not available or you just don’t have any zucchini on hand, then purchasing zucchini from a brick-and-mortar store suffice. Almost all-year zucchini is available in most stores. It will most likely have a wax coating on them to preserve them during transit.

I  am so glad that we have fresh zucchini in the stores right now. I will be growing it this summer as I always do. But, until then, I will be buying it from my nearest grocery store. I started making these healthy loaves of zucchini bread many years ago.

How to Grow Zucchini?

Start seeds indoors with plenty of warmth, light, and water approximately 2-3 weeks before your last frost in the spring. Or, sow zucchini seeds directly in the garden at least 7 days or so after the last spring frost.

Growing zucchini is fairly easy in the garden. They prefer warm to hot days, high in the ’70s is best. Good rich soil, composted is a bonus and necessary. They are prolific plants.

Zucchini plants are a fast-growing plant. From seed to picking the fruit, only takes around one month! The plant starts to slow its production after that time, which works well since they produce more than enough.

Other Ways to Grow Zucchini Plants

One-Bowl Dessert Recipes

Both of these recipes are one-bowl, no electric mixer needed either. (Optional) if you do not like to use oil, try substituting all the oil with unsweetened applesauce or try splitting it with half oil and half applesauce. You may also reduce the oil with equal amounts of slightly melted butter.

I love both recipes. The cinnamon zucchini bread is great when I want a comfort-food dessert and the chocolate zucchini bread is for when I am definitely craving something with chocolate and I won’t feel guilty about eating it!

Preparations for Both Recipes

Shred the zucchini; and for any leftovers, place the raw zucchini in a wax paper bag inside of a freezer bag with the weight and the date on the outside of the bag. Freeze the raw zucchini for up to 6 months. I usually buy or pick several to make and freeze, since I already have everything out anyways!

Sift the dry ingredients together or use a whisk in a bowl in place of sifting to remove any lumps. Also, you may use these same recipes to make zucchini muffins. Be sure to check for doneness after 20 minutes of baking and every 5 minutes thereafter.

Cinnamon Zucchini Bread Recipe

Dry Ingredients

  • 2 1/2 cups organic unbleached flour (349 grams)
  • 1 teaspoon baking soda
  • 1 teaspoon of baking powder
  • 1 teaspoon salt
  • 2-3 teaspoons cinnamon (we prefer Saigon Cinnamon for its strong flavor)
  • 1 cup organic cane sugar (200 grams)
  • 2/3 cup brown sugar (151 grams)

Make a well in the above ingredients and mix in the following wet ingredients below.

Wet Ingredients

  • 3 eggs at room temperature (pre-crack them in a bowl)
  • 1 cup oil, light oil is best (224 grams)
  • 1-2 teaspoon(s) pure vanilla extract
  • 2 cups shredded zucchini (approximately 251 grams)
  • Adding raisins, currants, nuts, chocolate chips or even blueberries should be folded in now

Directions

  1. Mix all ingredients until incorporated well; don’t overbeat
  2. Place in 2 long bread pans, greased lightly, or a long lasagna pan or mini loaves and mini muffins pans
  3. 350* oven-Bake for approximately 40-55 minutes (Only rotate if necessary if the centers are fairly firm)-less time for mini
  4. Cool in pans for 15 minutes
  5. Pop-out and lay on their side to finish cooling
  6. Serve warm with butter, homemade whipped topping, or ice-cream!
  7. The zucchini bread freezes well; up to 6 months in the freezer

Chocolate-Coffee Zucchini Bread

Dry Ingredients

  • 2 1/4 cups organic unbleached flour (314 grams)
  • 1/2 cup good cocoa powder (40 grams)
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 cup organic cane sugar (200 grams)
  • 2/3 cup brown sugar (151 grams)

Make a well in the above ingredients and mix in the following wet ingredients below.

Wet Ingredients

  • 3 eggs at room temperature
  • 1 packet Starbucks instant coffee (approximately 1 teaspoon)
  • 1 cup oil, light oil is best (224 grams)
  • 1-2 teaspoon(s) pure vanilla 
  • 2 cups shredded zucchini (approximately 251 grams)
  • Adding raisins, currants, nuts, chocolate chips or even blueberries should be folded in now
  • Optional: 1/2 to 1 cup chocolate or white chocolate chips-I usually do one pan with chips and one without

Directions

  1. Mix until incorporated well, don’t overbeat
