Sunday morning in our home is like date night on Friday. We reserve every Sunday morning for a nice breakfast together like Friday night date night. We gather our thoughts on what we hope to accomplish for the coming week. Our traditional breakfast is The Fluffiest Sourdough Waffles For Two with blueberries.
While visiting an antique store, Cohutta Forge, and antique shop in Georgia I stumbled on a unique cast iron pan. I started my journey to find out how to make these light little fluff balls of goodness.

History of Aebleskiver or (Ebelskiver)
From what I have read so far, it appears the Aebleskiver originated from Denmark. It is considered a dessert. Traditionally served during Advent with glogg, a Scandinavian punch. Aebleskiver means “apple slices” in Danish. The Danes love to eat Aebleskiver during Christmas and the new year, probably the most popular for them.
Traditionally, apple slices are cooked in the centers. I decided I was having issues with the batter sticking to add any more variables to the mix. Once the pan is well seasoned, I am sure I will try the traditional way. Since I am an adventurous person. Updated, this past week I did try adding the apple pie jam and it came out! Trial and error!
How to Make Aebleskiver
This is the recipe I created on a whim. It came out great! I probably could have used my sourdough waffle recipe but I read this should be a cross between a pancake and a doughnut/muffin. The recipe can most definitely be interchanged with other ingredients.
Instead of sourdough, use equal amounts of flour and water to account for the sourdough starter. Any milk can be used for the buttermilk, but I prefer my very own Buttermilk DIY. I also prefer to use my recipe for Homemade Raw Milk Butter sometimes instead of using ghee. The powdered heavy cream is optional.
I find it best to add the apple jam after I have finished cooking them. It causes them to stick to the pan a lot less. We filled the Aebleskiver with my homemade Apple Pie Jam. Sourdough Apple Aebleskiver Recipe
Ingredients for Aebleskiver
Heat the cast iron pan on low to medium while making the batter. Adjust accordingly to ensure the pan is good and hot before filling with batter. Water should bounce off and instantly dry. The pan should not be so hot it smokes.
- 1 cup flour (organic, unbleached if possible) freshly ground is best
- 1/2 cup sourdough starter-room temp and recently fed
- 1 separated egg-room temperature
- 2 tablespoons melted butter (Ghee or other fat) and slightly cooled
- 1/2 cup buttermilk (room temp if possible)
- 1/2 cup of filtered water or apple cider
- 1 teaspoon powdered heavy cream (optional)
- 1 teaspoon vanilla (homemade with moonshine is supreme)
- 1/2 teaspoon of salt
- 2 tablespoon sugar in the raw or cane sugar
- 1/2 teaspoon cinnamon
- Dash of freshly grated nutmeg
- 1 -1/2 teaspoon baking powder-try and use organic
- 1/2 teaspoon baking soda
Directions for Cooking Aebleskiver
- Hand whip the egg whites in a bowl
- Add the egg yolk, sourdough starter, vanilla, butter, water, and buttermilk in another bowl
- Stir well
- Add to the egg yolk bowl, flour, sugar, salt, heavy cream powder, cinnamon, and nutmeg
- Mix well
- Gently fold in the whipped egg whites to the egg yolk batter
- Add the baking powder and baking soda very last
- Mix well-don’t overmix!
In a well-seasoned and oiled Aebleskiver pan, add batter to two-thirds of the way up the crevice. I actually found a small cookie scoop that has the exact amount of batter every time. For oiling the cast iron, I prefer to use unrefined coconut oil.
When bubbles appear around the outer edges, like with pancakes, it’s time to roll the ball. Poke the Aebleskiver under the side, if it gives, roll it halfway on its side. Skewers or anything that has a nice point is excellent for poking and rolling the ball.
I use an antique barb sock puller-on thingy. I am not sure what it is but that barb worked well! The batter will ooze out, that is a good thing. Continue rolling and cooking until lightly browned and cooked.
Immediately roll in 10X sugar aka confectionary sugar. Doing this over a rack with a cooling rack over it makes it easier to catch the extra white sugar. Add butter, whipped cream, jelly, syrup, honey, or fresh fruit to your liking.
Freezing and Storing Aebleskiver
There were a few leftovers that were put in an air-tight jar and placed on the counter. I have read quite a few times the Aebleskiver can be frozen for months and reheat just as freshly baked. I will be trying that next Sunday now that I have the pan seasoned fairly well.
In Conclusion
Making sourdough Aebleskivers was a challenge at first. It did take a little trial and error to finally make the perfect Aebleskiver. Once the cast iron pan got well seasoned, really helped to make them turn out better.
I love a versatile cooking utensil. There are other ways to use the Aebleskiver pan. This pan is perfect to make Homemade Flaky Biscuits from Scratch for Two and Easy Buttermilk Wheat Bread Machine Rolls. I forgot to mention how I use it for buttermilk biscuits. Crunchy outside and flaky inside.
