These molasses cookies are great any time of the year. I always have all the simple, healthy ingredients stocked in my butler pantry. Recently, I shared this with a wonderful group of ladies for a Virtual Cookie Exchange, it was an awesome gathering. 

There are a few variations of molasses, the process, and the taste are different. Interestingly enough, one has more health benefits than the other two; continue reading below. Background information on molasses

  • Type 1: Light Molasses is produced after the first boiling of the sugar cane. This type of molasses is sweeter than the other types since only a small amount of sugar has been extracted. 
  • Type 2: Dark Molasses is produced after the second boiling and more sugar is extracted during this process.
  • Type 3: Blackstrap Molasses is produced after the third boiling of the cane sugar-producing in thick and dark molasses. As a result, it’s more bitter in taste than the other two molasses. Blackstrap molasses contains vital vitamins and minerals, such as iron, calcium, magnesium, vitamin B6, and selenium. 

Sulfured versus un-sulfured:

  • Sulfured molasses is produced from younger sugar cane and sulfur dioxide is added as a preservative. I personally have never and would not use sulfured molasses as I tend to stay away from sulfur dioxide. 
  • Un-sulfured molasses is produced from mature cane plants that been allowed to ripen naturally in the field. As a result, it’s typically the type used in most recipes because it is sweeter than the other molasses.

  • Molasses can help anemia when the diet is lacking iron. Did you know that just 5 tablespoons in one day fulfill 95 percent of the daily allowance of iron in our diets?
  • If constipation is an issue, blackstrap molasses can help with that.
  • Interesting fact, blackstrap molasses is said to thicken hair as well as stimulating stronger hair growth. 
  • Mix 1 tablespoon blackstrap molasses with warm water in filtered water or raw milk if possible daily
  • Mixing blackstrap molasses on ice cream, yogurt and kefir is a great way to drink it too. 
  • Molasses has a long shelf life-best stored in a cool dark place, glass jar. Long shelf life as in years! If the right conditions are met.
  • Molasses is still a form of sugar, note this if you have any blood sugar issues; its glycemic load is lower compared to white sugar.

Kefir molasses boost

It’s been almost a year since I got the kefir bug. I noticed when my kefir grains look a little tired, I give them a tablespoon of un-sulfured molasses along with 2 tablespoons of organic unrefined sugar. I am not sure because it is summer or that I make kefir weekly but about every 3 weeks, the kefir needs a little extra kick. By the time the next batch of kefir is ready, I definitely notice more kick to the kefir.

For the past 20 years, I have been making these wonderful cookies. These cookies are one of my sonโ€™s favorites. With this from-scratch cookie recipe, you can add more or fewer spices to taste. I prefer my cookies on the spicy side and prefer to actually use a little more than listed here. 

Substitutions: For a few substitutions, try changing out the oil with coconut oil and the buttermilk for the milk. If you do not have buttermilk; try using the milk plus 1 tablespoon of vinegar to create buttermilk. Raisins are optional, soak them in boiling water prior to making the recipe.

Preparation

Gather the wet and dry ingredients, preheat the oven to 350 degrees, soak the raisins and make the buttermilk if needed.

Wet Ingredients-Combine in a bowl 

1/2 cup sugar-I prefer Sugar in the Raw

Molasses-1/2 cup-un-sulfured if possible

Light oil-1/2 cup oil

1 beaten egg

1/4 cup raw milk or buttermilk 

Dry Ingredients-Sift over Wet Ingredients

2 ยผ cups flour-Optional ยฝ whole wheat and ยฝ unbleached flour

1/2 teaspoon baking powder

ยผ teaspoon ginger

1/4 teaspoon allspice

1/4 teaspoon cinnamon 

ยผ teaspoon salt

Optional:

  • 1/2 cup raisins (pre-soaked in boiling water-drain before mixing into the cookie dough)
  • 1/4 cup sugar and 1 tablespoon cinnamon for coating the cookie dough

Instructions:

  1. Mix together the wet ingredients in a bowl
  2. Sift in the dry ingredients over the wet ingredients bowl. Do not to over mix.  You may choose to hand mix the batter.
  3. Fold in the well-drained raisins (optional)
  4. Drop by small cookie scoops into a bowl of sugar and cinnamon
  5. Roll in the cinnamon-sugar mixture
  6. Drop on greased cookie sheets or cookie sheets lined with silicone. If using silicone lined sheets or copper cookie sheets, omit grease.

For an extra zing, combine 1 cup sifted confectioners’ sugar with milk or water, 1 teaspoon of vanilla extract to stir to the consistency of a glaze. Drizzle on warm to cool cookies.

Thisย one-bowl made from scratch molasses cookies are great alone or used to house homemade vanilla or coffee ice cream between 2 cookies. These cookies won’t last long but if you need to freeze them, go ahead, they freeze well for many months.

Bake Time:

  • Bake for approximately 10 minutes
  • Leave on cookie sheet for 1-2 minutes
  • Place on a cooling rack to cool
  • Makes approximately 48 cookies

Cookies are for any time of the year. In the winter the spices remind us of the holidays. In the summer, these cookies are great as an ice cream sandwich. Even better, if you make the ice cream yourself!
