Types of Chicken for Chicken and Dumplings
You may use fresh, frozen, smoked, or already cooked chicken for this recipe. It’s best to have large pieces of chicken for the dumplings to steam on. Placing the dumplings directly in the broth; soggy dumplings could occur.
When using frozen chicken in the Instant Pot, I use the “rice setting”. That is my preference. If you are using smoked or other cooked chicken, ensure the broth is boiling when placing the chicken in it. This prevents further cooking of the chicken by a few minutes.
Instant Pot Chicken and Dumpling Recipe
- 2 pounds of chicken
- Onions (diced or dehydrated)
- Celery (diced or dehydrated)
- 1 cup fresh or frozen carrots, diced
- Salt and pepper
- Herbs (optional)
- 1 quart of organic chicken broth/stock (4 cups) approximately for frozen or raw chicken
- 2 cups of organic chicken broth/stock if using smoked or cooked chicken
- Other additives you prefer
Use the rice or the poultry setting on the Instant Pot. Swing the handle to seal if applicable. Once cooked, do an instant release. Be mindful of the steam being released.
Fresh or frozen chicken: cook according to the thickness. Smoked or cooked chicken, boil the broth first prior to placing the chicken in the Instant Pot.

Preparing the Chicken Stock to Make Dumplings
- Remove the chicken breast and cut it into large pieces
- Ladle out most of the chicken broth stock, leave approximately one cup for steaming the dumplings **
- Hit the sauté button on the Instant Pot
- Gather ingredients to make dumplings
- Bring the chicken broth stock to a boil
- Return the cut chicken pieces back to the Instant Pot
- Make the dumplings
**Save the broth stock for making another meal, do not add it back into the pot while making the dumplings. See below after this recipe for ideas.

Ingredients for Instant Pot Chicken Dumplings
- 1 1/2 cups sifted flour (221 grams)
- 2 teaspoons fresh baking powder
- 3/4 to 1 teaspoon salt
- 3 tablespoons homemade butter or other fat (38-40 grams) room-temperature
- 3/4 cup of raw milk (170 grams) approximately

Directions for Dumplings
- Mix all the dry ingredients in a large bowl
- The butter should be pea-size (like making biscuits)
- Add the milk only until incorporated (only once the broth stock is boiling)
- Do not over-mix the batter
- Drop tablespoons of dumplings onto the chicken and not in the broth
- Cook 5 minutes on sauté for 5 minutes (no lid on)
- Place the lid on but do not try and seal it, the sauté function will turn off if you do
- Cook for another 5 up to 10 minutes (usually between is the best)
- Steam the dumplings until they are dry and fluffy

We cannot eat all this dinner in one sitting so another meal is made using leftover chicken and broth stock. I will cook approximately 4 cups of egg noodles and add the chicken and broth stock. If any dumplings were left, they actually make a gravy sauce in the broth which is excellent!
