This recipe can be made without a bread machine but it will be more work without using one and I need less work in my busy life. Not to mention the strain that is caused on the wrists from kneading the bread dough.

Bread Machine Basic Dough
Using a bread machine to make any type of dough sure is a time-saver. Once the dough cycle is completed after one and a half hours, the ham, swiss, and wet horseradish mustard is layered on and rolled up. The bread machine replaces the long kneading and proofing time that the conventional way of making bread does.

Horseradish Mustard Ham and Cheese Rollups Recipe
Bread Machine Dough Ingredients
- 2-1/2 cups wheat berries or 349 grams (the same weight is for grinding wheat or already ground flour)
- Buttermilk ¾ cup +2 tablespoons or 214 grams
- Butter 2 tablespoons-room temperature
- Honey 2 tablespoons
- Salt 1 teaspoon
- 2 Tablespoons heavy cream powder
- 1 teaspoon yeast (any yeast, bread, rapid rise, or active dry, they all seem to work)
- 1-2 tablespoons of moonshine horseradish mustard-wet or dehydrated
Bread Machine Instructions
- Place all wet ingredients first in the bottom of the bread machine pan (butter, buttermilk, and honey)
- Next, all the dry ingredients with the yeast added last
- Chose the dough option or one that doesn’t bake the bread
- My machine takes 1-1/2 hours for this cycle
Making the Ham and Cheese Rollups
- 8 ounces cheese (Swiss is great)
- 1-pound sliced deli meat (ham is great)
- Mustard of your choice
- Roll the dough thin in a rectangle size 9×12 approximately
- Add 1-2 tablespoon mustard of choice over the whole dough
- Add a layer of cheese then ham down the center
- Pinch the seams down the center, fold the ends over, and pinch
- Cover and let rise-usually 45 minutes
- Bake 350* oven until done (40-50 minutes)
- The internal temperature of the bread should be around 190*

Slicing Meat to Make Ham and Cheese Rollups
We love turkey ham and we have never found a deli that carries it so we decided to purchase a meat slicer from Facebook Marketplace and slice our own deli meats.
You most certainly can have your local deli slice your meat or you can buy the prepackaged meat in the deli department. A lot has to do with a preference for the cut of the meat and its ingredients when choosing deli meat. We prefer our ham and cheese rollups to have the thinnest meat possible.
Ham and Cheese Rollups Type of Mustard to Use
Using any type of mustard for this ham and the swiss loaf is a matter of personal taste. Our family loves the bite of good homemade horseradish mustard. But mild mustard-like yellow golden mustard will certainly suffice in this recipe. Be mindful of putting too much of a thick layer of mustard on the dough, it will make it gooey and may create soggy ham and cheese rollups.
Making Horseradish Mustard
My very best kept secret to the best horseradish mustard recipe is using moonshine, aka, white lightning! You may omit the moonshine and use vinegar and water if you prefer. Horseradish mustard can be fermented and then dehydrated and ground into a powder to last for a very long time.

Buttermilk Used in Bread Making
I use DIY Homemade Buttermilk in any bread recipe possible. I love buttermilk in bread, it gives it a slight twang and doesn’t add a lot of unnecessary fat to a recipe. Buttermilk will actually tenderize the gluten in the flour making it so much softer and the end product is so tasty.
Reheating a Ham and Cheese Rollups
There are many ways to reheat ham and cheese rollups. I don’t slice the loaf until I am ready to eat a portion. Leaving the loaf whole will prevent it from drying out for the next meal. Heat up a 1-inch slice in a toaster oven or even in an oven on a cookie-lined sheet.
A Panini machine is great too for crisping the bread and melting the cheese. We prefer to wrap half of the loaf of ham and swiss loaf with food-grade wax paper and wrapping foil around it to heat in a toaster oven. An air-fryer is nice if you like your bread to be really toasted.
